Wholesome Ayurvedic muffins
I first started making these muffins when I had Sufi, I had never taken on baking before, but something inside of me wanted to root down, nest and make muffins...well, then I started exploring to maker them as delicious and nutritious as possible and here is the results.
Ayurvedic nutrition is designed to enhance digestion. Foods are considered warming or cooling (not only only in the actual temperature of the food, but it’s effect on the body), and based on your Dosha type, foods can either aggravate or balance your Dosha. Cooked foods are highly encouraged in Ayurvedic cooking, as they are gentler on the body and stimulate the digestive system; the act of cooking ‘…moisten and lighten…’ many foods.
Most would assume that once a person has fallen ill they are then to turn to this ancient healing system, but in fact it is actually a way of life, a lifestyle, that prevents diseases from forming. Diseases are formed when there is an imbalance in the body, and imbalance comes from eating out of the recommended guidelines for each of our respective Dosha (or a mix of two). From poor nutrition comes imbalances which breads disease and so forth. Bringing our bodies back into balance involves educating ourselves on our constitution (Dosha) and learning which foods to favour or avoid (warming vs cooling foods). In Ayurveda, what goes on inside the body affects the outside of the body. Therefore, healing comes from within. It is also to be noted, that alongside proper nutrition, our actions play an important role in reaching a balance. We must be conscious of our thoughts and actions in ways that support our constitution. The same goes for when we are cooking or baking, what we feel, our mood and actions affects the Prana or life force of our food. So be sure you bake these delicious and nutritious muffins when you are in a good mood!
INGREDIENTS
1 tbsp ground flax
1/2 cup non-homogenized milk or almond milk
1/4 cup maple syrup (make sure it is real, pure maple syrup)
1 tea spoon maple sugar (or coconut sugar)
1/2 cup oat flour (grounded oats)
1/2 cup rolled oat
1/4 tsp baking soda
1/8 tsp baking powder
1/2 tsp cinnamon
1/4 tsp ginger powder
1/4 tsp sea salt
1/4 cup Ghee
1 cooked apple
INSTRUCTIONS
Preheat oven to 400F. Line muffin tray with muffin liners, or grease the muffin tim with ghee or coconut oil.
In the meantime, cut one apple into small square pieces so it can cook faster and mooch better. In a small sauce pan put 1 table spoon ghee and cook the apples with cinnamon and a splash of maple sugar. Let it cook with 1/4 cup of water on low heat for about 30 minutes.
In a bowl mix the rest of the ingredients for the muffin and mix well. At the end add in the Apples once cooked. Place in the oven to bake for about 20 minutes or Golden.
